Facts and figures on the cultivation of starch potatoes in Austria

Industrial Starch Potatoes

In Austria, industrial starch potatoes were cultivated on an area of approximately 5,200 hectares in 2025, while industrial table potatoes were cultivated on an area of 3,903 hectares. Cultivation took place under both organic and conventional farming systems and was concentrated in the federal provinces of Lower Austria, Upper Austria, and Burgenland, with the Waldviertel region being the main cultivation area. Yields per hectare and starch content vary considerably by region and are subject to annual fluctuations due to differing growing conditions.

Cultivation and price formation take place within the framework of cultivation and supply contracts between farmers and the processing industry.

Potato starch is produced from the harvested potatoes at the potato starch factory in Gmünd in the Waldviertel region. Potato starch has a wide range of applications, for example in many areas of the food industry, the paper industry, and the pharmaceutical industry.
